How to make Veg. Manchow Soup with Genie Food Group

Ingredients to make Veg. Manchow Soup: 

For Fried Noodles: 

Quantity: Ingredients: 
4 Cup Water 
1 Tbsp Salt 
1 Tbsp Oil 
1 pack Hakka Noodles 
1 Tbsp Corn flour 
As required Oil (for frying) 

For Soup: 

Quantity: Ingredients: 
2 Tbsp Oil 
1 Tbsp Genie Food Ginger Paste 
1 Tbsp Genie Food Garlic Paste 
2 Pieces  Chillies (Finely Chopped) 
½ piece Onion (finely chopped) 
½ Piece Carrot (finely chopped) 
3 Tbsp Cabbage (finely chopped) 
½ Piece Capsicum (finely chopped) 
5 Pieces Beans (finely chopped) 
2 Tbsp Coriander stem (finely chopped) 
4 Cup Water 
¾ Tbsp Salt 
2 Tbsp Soy Sauce 
2 Tbsp Vinegar 
½ Tbsp Pepper Powder 
1 Tbsp Genie Food Red Chilli Sauce 
1 Tbsp Cornflour 
¼ Cup Water (for slurry) 
2 Tbsp Coriander (finely chopped) 

Method to make Veg. Manchow Soup:  

For the preparation of fried noodles:  

  1. First, take a large vessel and add 4 cups of water, 1 Tbsp salt, and 1 Tbsp oil to it.  
  2. Add a pack of Hakka noodles once the water comes to a boil.
  3. Let the noodles boil for 5 minutes or refer to the package for the cooking time of the noodles.  
  4. Once the noodles are half cooked or al dente, turn off the heat and strain the water from the noodles.  
  5. Rinse the noodles under cold water to prevent them from cooking further. 
  6. Add 1 Tbsp corn flour to the noodles and toss them gently to coat them with corn flour. 
  7. Now, take a large vessel and add oil to fry the noodles.  
  8. Once the oil is hot, add the noodles and deep fry them till they are crispy.  
  9. Once the noodles are fried completely, strain them and keep them aside.  

For the preparation of Manchow soup:  

  1. First, take a large kadhai and heat 2 Tbsp of oil to it. Let it warm for some time.
  2. Then, add 1 Tbsp of Genie Food Ginger Paste, 2 Tbsp of Genie Food Garlic Paste, and 2 finely chopped chillies.  
  3. Saute them on a medium flame and add ½ finely chopped onion to it.  
  4. Saute the onion till it becomes translucent and add the other vegetables.  
  5. Add ½ carrot, 3 Tbsp cabbage, ½ Capsicum, 5 finely chopped beans, and 2 chopped coriander stem to it. Mix these vegetables properly and saute them for a minute.  
  6. Now, add 4 cups of water to it and ¾ Tbsp salt. Mix well.  
  7. Let this mixture boil on a medium flame till it comes to a boil.  
  8. Then, add 2 Tbsp soy sauce, 2 Tbsp vinegar, ½ Tbsp pepper powder, and 1 Tbsp Genie Food Red Chilli Sauce. Mix this properly.  
  9. Now, take a small bowl and add 1 Tbsp corn flour and ¼ cup water. Pour the slurry into the kadhai and mix it well.
  10. Keep stirring the mixture until the soup thickens and turns a little glossy.  
  11. Now, add 2 Tbsp freshly chopped coriander and give it a final mix.  
  12. Finally, serve this hot and savoury Veg. Manchow soup in a bowl and top it with fried noodles.
