How to make Palak Cutlet at home with Genie Food Group

Ingredients to make Palak Cutlet Recipe: 

For Cutlet Mixture:

3 Tbsp Oil 
3 Pieces Green Chilli 
1 Tbsp Genie Food Ginger Paste 
1 bunch Spinach/ Palak (chopped) 
3 pieces Potato (boiled & mashed) 
½ Cup Paneer/ Cottage Cheese (Grated) 
½ Cup Bread Crumbs 
1 Tbsp Coriander Powder 
¼ Tbsp Cumin Powder 
½ Tbsp Garam Masala 
½ Tbsp Genie Food Aamchur Powder
2 Tbsp Coriander (finely chopped) 
½ Tbsp Salt

2 Tbsp Corn Flour 
1 Tbsp Maida 
¼ Tbsp Genie Food Chilli Flakes Seasoning 
¼ Tbsp  Salt 
½ Cup Water 
1 Cup Bread Crumbs 

Method to make Palak or Spinach Cutlet: 

  1. Firstly, take a large kadhai, add 3 Tbsp oil and let it warm.
  2. Add 3 Chilli and 1 Tbsp Genie Food Ginger paste and saute it well.
  3. Then, add a bunch of palak and saute it until palak shrinks.
  4. Once it shrinks, transfer this to a plate and let it cool down.
  5. Once cooled, blend this in a smooth paste without water.
  6. Transfer this palak paste to a large bowl and add three potatoes.
  7. Then, add 1/2 cup paneer and 1/2 cup bread crumbs.
  8. After that, add 1 Tbsp Coriander Powder, 1/4 Tbsp Cumin Powder, 1/2 Tbsp Garam Masala, 1/2 Tbsp Genie Food Amchur Powder, 2 Tbsp freshly chopped coriander, & 1/2 Tbsp salt.
  9. Mix everything well and ensure the spices combines with the vegetables to form a non-sticky dough. 
  10. If the dough feels sticky, add 1 Tbsp of bread crumbs and combine everything well. Breadcrumbs help absorb excess moisture from the dough.
  11. Now, take a bowl and add 2 Tbsp corn flour, 1 Tbsp maida, 1/4 Tbsp Chilli Flakes, and 1/4 Tbsp salt to form a paste.
  12.  Add 1/2 cup water to the batter to make a smooth paste without lumps.

Method to fry the cutlets:

  1. Take a bite-sized, maybe a handful of the vegetable mixture, and mould it into a cylindrical shape.
  2. Dip it in maida paste and coat it properly from all sides.
  3. Then, roll it in breadcrumbs and ensure the breadcrumbs cover all sides.
  4. Take a frying pan, and add some oil to it. Once the oil is hot, add these cylindrical rolls to the oil to fry.
  5. Deep fry these rolls till they are cooked and golden brown. Stir occasionally to make sure all sides are fried properly.
  6. Once cooked, transfer them to a plate with a kitchen towel. It helps remove excess oil from the palak cutlet.
